Key Takeaways
The thing that I always sort of prided myself on with my staff, when I was running the restaurants, that I was never going to be line cook, I was never going to be the best at any position but I was always who they wanted first to come back there and help them.
You just need to put on an incredibly solid event, and if you’re smart, one you can build on so next year you have the bones ready to go and so you’re not reinventing the wheel.
Do the task, and do the extra fifteen mins it’s going to take to set up the system for that task, or even just create a mini checklist for that task.
I wish I had realized that I could be bolder and I could be larger, and not have to be in a small space.
